Production area: Furnari (ME), Cinque Fontane Estate
Grape variety: 50% Nocera and 50% Syrah
Classification: Protection of Designated of Origin (DOC)
Soil: Medium-textured soil, traces of limestone.
Altitude: 200 metres above sea level
Vineyard: Spurred cordon, green harvest is performed with the
removal of approximately 40% of grapes.
Average yield: 50 – 55 ql/Ha
Plants per hectares: 4000
Harvest: Manual, between the second half of August and the first
half of September.
Vinification: Grapes are macerated for 16 – 18 days at controlled
temperature of 27°C and pumped over daily. The first delestage
is performed after the third day. The second is carried out when
fermentation is almost at the end. After being devatted, grapes
are soft-pressed.
Ageing: In small 225 lt French oak barrels for about 12 – 14 months
and for another 6 – 8 months in bottle at controlled temperature.
Alcohol content: 14% vol
Serving Temperature: 18 – 20°C
Recommended with: Exellent with very mature cheese, roasts,
game birds and ground bird.

Tasting
Visual profile: Intense ruby red with garnet reflections.
Olfactory profile: Complex, with notes of small red and blue fruits
confiture. It evolves with spicy hints of mint chocolate, wood, black
pepper, cloves, leather and tobacco.
Taste profile: Fresh but acidic at the same time. The tannins are
soft and pleasant, the finish is persistent and sweet. It ends with
notes of licorice roots and burnt caramel
