FIN CHE VENGA BRUT NOCERA ROSÈ SPARKLING WINE – CAMBRIA

The Fin Che Venga comes from Nocera grapes purified in purity and pressed softly up to 0.6 bar so you can get a gorgeous rose. This sparkling wine produced with the Classic Method is a tribute to the History and Legend of the Country of Furnari. King Rugero II of Altavilla gave a way of sayng to the peasant farmer Antonio Furnari “Fin Che Venga” for respecting the covenant of honor.

Harvest: Early September, manual in plastic boxes realized before
the ripening.
Vinification: Graping destemming and coid maceration at 6°C for 12 hours. Soft pressing until 0.6 bar. Fermentation at a controlled
temperature between 14°C and 16°C with selected yeasts.
Ageing: In stainless steel containers for 6 months, during which the malolactic fermentation takes place in a natural way. The second fermentation takes place at the end of the Spring. The fermentation into the bottle requires two months and half at a controlled temperature of 14°C. The bottles ripen on the yeasts for a minimum period of 24-30 months. The remuage is carried out in pupitres that
are moved twice a week for one month and half. After which, there
are the degorgement and the dosage.
Alcohol content: 12,5% vol.
Serving temperature: 8 – 12°C
Recomended with: Good from the aperitif to the dessert.
Meal based on fish or meat.

Tasting
Visual profile: Cherry pink, intense and bright with a fine and persistent perlage.
Olfactory profile: The nose is complex and delicate. The first note is fruity with lychees, currant and grapefruit hints that gradually develops in citrus fruits, lemon and orange blossom. Later it evolves with aromas of yeast, bread crust and hints of butter giving structure and elegance to this Metodo Classico.
Taste profile: Fresh, sapid and structured. With its personal set of fine, persistent and captivating bubbles, it has a light tannic note that reinforces its pleasantness. Quite persistent with citrus flavors and a mineral and bitter almond finish.
